Are you attending or hosting a potluck for Easter next weekend? I am, so I've been searching for recipes that I can make a few days ahead of time. This variation on Amish Friendship Bread appeals because it doesn't require that I stir and babysit a starter for a month before I can actually use it. Let me know if you try this and what you think.

I have this one & it is great!! I have made variations, too!! I made one batch with extra cinnamon, allspice, ginger & cloves. It is delicious!! Then I made the next starter with wheat flour! I didn't have anyone to give the starter's to, so I tried to make them all!!! Whew, what a fiasco, but the breads are yummo!! I made 1 batch with 2 cups of cranberries & 1 cup chopped pecans; 1 with 1 cup chopped dates with the pecans;1 with mashed bananas & the pecans; 1 with golden raisins & pecans, & I am brain dead, can't remember what I did with the rest. I used instant choc, butterscotch, vanilla, french vanilla & pistachio puddings. You do the math, if you make 4 loaves for every starter, and you didn't give any away.... Wow!! The freezer is over crowded, but we will have these for snacks or to give away for a while!! I am excited to try this recipe. My mom & I have made Amish Friendship Bread for years--love it. Yes, the regular way is quite time consuming. We have figured out a way to make it easier for us--when you are making the 1st batch, put the ingredients in a large ziplock baggy & squish it & burp it daily. It is large enough to take all of the "growing" ingredients. You can write the date right on the bag & when you are ready to divide, measure out the portions into large ziplock baggies to give to friends-family.... Love the bread. Thank you Beth!
