KALAMAZOO — When Taco Bell and Pizza Hut left the lower level of Western Michigan University's Bernhard Center April 15, after deciding not to renewing their contracts, the school's Student Affairs and Marketing departments had a challenge.

School officials asked them to fill the space with a new business concept by May 31.

They came up with Western Scoops, an ice cream shop parlor that sells 16 flavors of ice cream. It is operated by WMU's dining services.

“We're exceedingly proud and happy,” said Judy Gipper,director of dining services about the project. “It was important for us to do something local.”

The ice cream is from Hudsonville Ice Cream of Holland. Hudsonville ice cream flavors are also created by National Flavors of Kalamazoo .

WMU had success selling several flavors of Hudsonville Ice Cream at another Dining Services-run restaurant, Bistro3, on campus this year, Gipper said.

"We mostly focused on a popular food that could be offered without expensive equipment and that led us to the concept of selling ice cream," Gipper said.

Western Scoops opened June 2 and serves sundaes, milkshakes, floats, fat-free frozen yogurt and ice cream blended with candy like Oreo, Snickers, Reese's, Heath, and Butterfinger.

Each scoop of ice cream costs $2.11 for about four ounces.

Waffle cones and bowls are made fresh on site. Some are dipped in chocolate.

Favorite ice cream flavors of students are Yellow Cookie Batter, Grand Traverse Bay Cherry Fudge and Blue Moon, Gipper said.

Scoops will have Hudsonville's top summer flavors soon, said Charlsie Dewey of Sabo Public Relations, which represents Hudsonville. Those flavors are County Apple Pie and Blueberry Cobbler.

Scoops is open 11 a.m. to 7 p.m. Mondays to Fridays and 11 a.m. to 5 p.m. Saturdays.

Mint Chocolate Chip Ice Cream Recipe | Barbara Bakes

3.5 Oz dark chocolate bar, finely chopped

1. Warm 1 cup of the heavy cream, half and half, granulated sugar and salt in a medium saucepan over medium-low heat, stirring occasionally, until the sugar dissolves.

2. In a large bowl, whisk together the egg yolks. Slowly pour the warm mixture into the egg yolks, whisking constantly, then pour mixture back into the saucepan.

3. Stir the mixture constantly over medium heat with a heatproof spatula, scraping the bottom as you stir, until the mixture thickens and coats the spatula (if using a thermometer, it should be right around 170 degrees F).

4. Pour the remaining 1 cup of heavy cream into the large bowl and set a mesh strainer on top.Pour the custard through the strainer and stir it into the cream. Add the vanilla and peppermint extracts and the food coloring (if using), and stir until cool over an ice bath.

5. Chill the mixture thoroughly in the refrigerator (preferably overnight). Churn according to your ice cream maker’s directions, adding the chopped chocolate during the last 5 minutes of churning.
